I am considering switching from a prepaid plan to a monthly plan. Will the data and minutes I have remaining on my prepaid plan carry over to the new plan or will I lose it all? Thanks!

You will lose anything on the prepaid side including any remaining balance on your account.
Make the switch the day before your pre-paid normally renews to maximize your benefits ( = minimize your losses).
If you do that, keep in mind that some plans are promotional plans and they might not be available when your prepaid month ends.
