I would like to purchase a 14-Day Europe Travel Pass for my trip that I leave for on May 8. It says to use by May 9th. Does this mean that if I purchase it now, I can activate the 14-day period starting anytime before May 9?

So you’re correct but also incorrect. This is because once you add the 14 day pass, you have 30 days to use it before it expires from your account (the correct part). Once you begin using it, ie you travel to one of the applicable countries and begin roaming, the 14 consecutive days will begin.
The problem here is if you add it now, it will actually expire on May 9th. Though you begin roaming say on May 8th, the pass will still expire the next day (the problem). I suggest you purchase the pass closer to your travel date, say May 5th or 6th.
