I have Unlimited International Texting as a perk, but am concerned about unnecessarily invoking Easy Roam.

It should not trigger Easy Roam in any way. Unlimited international text messaging is only available free of charge if you are sending them out within Canada. https://www.koodomobile.com/en/pickyourperk
