I am going to the island of Curacoa for 6 weeks. Can I use my Koodo service there? How much will it cost me in roaming. Would mainly be texting and using google maps

Curacao is considered an International destination, where you can use Easy Roam International (currently $16/ day) to use your Koodo sim https://www.koodomobile.com/en/easyroam
Any usage made will trigger the daily roaming fee, except for the incoming text messages.

If I take my SIM card out of my phone for 2 months and get a prepaid one there can I just put the Koodo one back in when return and it will still work or should I cancel my Koodo account the day I leave and get a new account when I return

Yes, it’s possible to take your Koodo sim card out if you do not want to use the services.
If you travel for at least one month, you might be able to put your line on seasonal hold, more about pausing your services can be found here
