I just returned from the Apple Store where my iPhone needed a physical fix as it was, ironically, not connecting to cellular networks. My phone now has regained that ability, but as part of the fixing process all the data had to be erased from my phone —including the esim data. The phone has been restored from the backup but the esim data is apparently not included. How do I regain my esim info so I can return to using cellular services?

Once the eSIM is deleted, you can’t get the same eSIM back to the phone. You would need a different eSIM. You can get an eSIM voucher from a store and change the SIM your self in self-serve https://www.koodomobile.com/en/help/esim-and-esim-vouchers? or ask the rep to assist you instore.
