Hello 
I called a few days ago and support activated Wifi calling on my Pixel 7. When I am on a call, it still only engages the GSM network and does not engage WiFi Calling
here is what I have done:

Try simulating a no-signal condition by turning on Airplane mode. You may be in an area with enough cellular signal that prevents your phone from automatically switching to Wi-Fi Calling.
When Wi-Fi Calling is turned on, your phone will automatically use an available Wi-Fi network, if it determines that you have low or no cellular coverage.

Try simulating a no-signal condition by turning on Airplane mode.
The only other way is to move to an area where you have little to no cellular coverage.
