I will be in Europe for 40 days. Could I buy two passes, one for 15 days and one for 30 days? If so I would activate the 15 day pass on arrival and when that expires after 15 days I would activate the 30 day pass so I would be covered for the rest of my trip. Anyone know if Koodo would allow that?

You should be able to add another pass after the first one expires, however, make sure you remove the first one at the end of the 14 days and then add the 30 day one.
