I have easy roam on my phone, but I just changed my plan to a Canada-US plan, do I need to remove easy roam or will the phone/plan just “know” not to use easy roam and use the Canada-US plan? I want to be sure I am not charged for both.

Yes, you can remove the add-on. It should not show any roaming charges when you are abroad. https://www.koodomobile.com/en/help/traveling-with-your-canada-us-rate-plan
Even though you do not need easy roam, keeping it on is also not an issue. You will not be charged easy roam while in the US while on the Canada-US plan
