I've been looking at a few stores now and can't seem to be able to find an eSIM. Where do I need to go to get one?

Which store did you go to? Was it a Koodo kiosk or a retail. A Koodo location should be able to give you an eSIM 

I see that you have your city set to Vancouver on here.

If they don’t have them, they should be able to search in their system for a store close by that does. I would give them a call to save yourself the trip as well.
