I currently have a phone plan with Koodo under someone else as the payer. They are cancelling their phone plan and all of us under.
My phone has been paid off and I want to keep my phone number and be moved to my own plan, is this something that can be done? and how do I go about this?

Yes, it's called the Transfer of ownership.
Ask account owner to do this process.
