If I buy an iPhone 12 from Koodo, will I be able to get Koodo on a simcard and use the eSim for another provider? Or does Koodo lock the eSIM usage making it impossible to use other eSIM providers?

CurrentKoodo phones are unlocked by regulations. You can use whichever carrier on it. There is no lock/restriction on the eSIM.
I'm pretty sure no carrier locks . the usage of eSIM. They act like normal SIM from any other carrier.
