I have recently lost my iPhone abroad in Switzerland. I was thinking of buying a new iPhone (unlocked) here in Switzerland and bringing it back with me. I will also be getting a new SIM card as well, will I be able to use the phone back in Canada with a new SIM card or will it have problems?

Have you suspended your Koodo service yet, make sure you do that so noone can use your old phone.
As the older iPhone was lost, you would need a replacement sim from Koodo when you are back to Canada.
Foreign iPhone is generally having no problem when you are using on Koodo network.
For the most part it should work.
But depending on the iPhone model there may be a LTE band that the Canadian model has and uses (band 29) that is not on the international model
