What are my choices for keeping Koodoo while in Mexico (don’t say add on), as not going to pay thru the nose. Either have some sort of reasonable plan or I quit Koodoo and get Mexican Tel plan?

The best way is to get a local SIM card and use it during your travels.
Otherwise, you can consider Easy Roam as an option and only use it during the days that you need to make or pick up a call, send a text message, or use data.
Well, sine you’re not wanting to use easy roam, do keep in mind you do retain incoming SMS for free so yuo can at least get text messages for 2FA or whatnot. Otherwise, yes a local sim card or a travel esim app to purchase data or talk as you require would work.
