To prevent your device from connecting to a US network, you can change your network settings from Automatic to Manual and then select Koodo. Note that depending on the phone, this may get reverted back after a phone reset.
There typically is no toggle to turn off roaming. There is a toggle to turn off data roaming.
The best way to stop all roaming is to take the sim out of your phone or to turn off your esim for the line.
To find out what is causing or triggering the easy roam, you can log in to your self serve and follow the instructions in the article below. Note that any outgoing texts or any talk (including calling your voicemail) will incur roaming charges.

What country is the phone travelling?
To stop all roaming, Can the sim not be removed from the phone?

Disabling it is just easier...and Safer
In your self serve if you go to that line and manage your Add-Ons, you can remove the Easy Roam INTL - Pay Per Use Access On and the International Data Roaming and International Voice Roaming.
This should cut off international roaming when not in Canada or the US
