After travelling for March break we noticed there was an email for an Easy Roam deal ( use 3 days get one day free ).
We had already setup Easy Roam before we left so wondering if we could get it applied to our account.

I don't think it can be applied after the fact. However you can try to ask a rep over Facebook messaging if you are overseas to see if that can help.

The offer can be applied only to the phone numner that got the offer by sending the unique code to the number indicated in the email your received.
If added successfully, you’d be able to check the details by hovering over the Easy Roam add on in self serve.
