Could I buy a phone from Apple or EBay,change the SIM card over and keep going with my current plan or do I have to upgrade through Koodo,which will cost me $10 more per month?
I have to upgrade by autumn to have iOS 16.

Yes, you could take the Koodo SIM out and put in another phone. There is no restriction on that.
