Is it possible to convert prepaid money into a post paid account (or some other way to get the money outside of the prepaid account)?

You have 90 days after your last top-up before your balances disappear. If you are away for a few months only, change your baseplan to the $15 one because as long as there are sufficient funds in your account they will automatically draw down on those to keep your account active. If you have some active minutes, you at least will have voicemail.
AFAIK, any prepaid balance can be transferred to a new post-paid plan [i](current policy to be confirmed by someone official, answers here have been contradictory) but you will lose any minutes/data remaining on the pre-paid account. In any event, the cheapest post-paid plan is at least as expensive as the $15 prepaid for someone who is not using anything.
You can also count on your first post-paid bill being on average 1.5 times your monthly plan, due to pro-ration (you will pay for the rest of the current billing period + next month in advance) so that will suck down your balance fairly fast.
