As long as you use the services in countries covered by the Easy Roam travel pass. the usage is covered.
Please note that it only covers calls/texts sent to numbers in the country you travel and calls/texts to Canadian numbers.
For example, if you are in China and want to call number to Hong Kong, those will be charged pay per use.

So just to confirm
I stay 3 nights in Hong Kong and activate the pass there When i get to mainland china i will still 11 days left of that same pass?
And will i be charged long distance charges for phone calls with in Hong Kong or China to local phone numbers?
The Asia Travel Pass is good for any of the following countries:
Bangladesh, China, Hong Kong, India, Indonesia, Malaysia, Philippines, Singapore, South Korea, Taiwan, Thailand, Vietnam
It’s good for 14 days total from whenever it first picks up a signal in one of those countries. So yes, if you land in Hong Kong and then on day 4, go to china, you would have the remainder of day 4 + 10 days in China.
The travel pass allows you to make calls and texts to Canada, and the country that you are currently in. Hong Kong is listed as a separate country and should be treated as such for the purposes of the travel pass. So while in Hong Kong, you can call and text to Canada, and Hong Kong numbers. While in China, you can call and text to Canada, and Chinese numbers.
