4 of us visiting US for 4 days. Need to communicate via text only. Would Pay-per-use roaming be more economical than Easy Roam.

Depends on how many texts you all plan on sending. If a line is sending more than 100 texts * then Easyroam would be cheaper.
Edit: * (/day)

Not exactly. If you're texting every day, easyroam would be $7/day. Pay per use charges $5 for a block of 100 text messages and you get until the end of the billing cycle to use them. Unless you're sending more than 100 a day, pay per use is definitely cheaper for texting alone.

I am assuming that either option is for an individual phone not an account ie all 4 phone no. are under 1 account.

Each line on the account is treated separately as far as billing and roaming is concerned.

Pay per use rates for texting are $5/100 outgoing texts, free incoming.

So we come do that with airplane mode on?

No, airplane mode has to be off. (If it's on then you won't get service). If you only want to send texts than disable data and don't make or receive any calls.

No. Airplane mode needs to be off in order to text. But you should make sure your data is off and data roaming is off too
