Signing up for BYOD Plan without a phone number?

I am trying to get a BYOD plan but on the billing page of sign up it requires me to enter a phone number. I don’t have a phone number for myself currently so I asked to use my family member’s phone number. later on in the credit check page I have to select “give me  a new number” or “transfer my current number”. If I choose “give me a new number” will this affect or cancel my family member’s phone number?

No it won't. You'll get a whole new number for your account without impacting the number you borrowed for the registration. In fact, even if you picked move the number, you would have to also have the account pin to port the number. So either way you would be ok. Go with new number and you'll be fine!
