How am I using data in the middle of the night when I’m not even on my phone and in a wifi area?

If you disable ‘Background Processing’ for all data apps you may reduce/eliminate their periodic data usage. Also, network activity (check coo with tower) may consume minor amounts of data. I took all the steps I mentioned and prefer to turn off my cell when I go to sleep.

Which phone do you have? Iphones for example have WiFi assist on by default, which uses cellular data if it determines WiFi is too weak or slow. A couple Android OEM's have the same feature but I don't remember if they keep them on or off by default.

Sometimes, ISP had a maintenance during the night or the WiFi modem had issue, wifi network could be off temporarily and phones could switched to cellular on its own.

So If you don't want to have any issue with cellular data usage, i would suggest you turn it off completely at night. Don't depends on WiFi to safeguard your cellular data.
