where do I find the information on the self-service part of the site about interruption of use during holidays? Or anywhere else on the site, for that matter?

What do you mean exactly? There's no interruption of use during the holidays.
I don't mean "the holidays" I mean times when I will be out of the country and want to temporarily stop the service.

You can't change to a seasonal hold through self serve, you have to call in to do it. The details are: $10/month minimum duration 1 month, max 6 months counts as a plan change so you will lose any grandfathered plans and need to choose an in market plan when resuming service after 6 months you will be automatically placed on the lowest priced plan available service must be active for minimum of 1 month before it can be put on seasonal hold again.
