What will happen if I just stop adding funds to my account?

I have the basic $15 a month, for unlimited texting prepaid plan. If my account balance goes to zero, and I'm owing $15 for the next month, what happens? Will my texting/calling/data all be disabled? Or just my texting? Or will it still be enabled, but I'll just end up OWING $15 more each month until my bill racks up?

It will be disabled as you need to keep your base plan paid up to continue any and all service.... Also after 90 days of being inactive the account will close for good.

Ok, and also, if I run out of current minutes with my talk booster add-on, will calling be disabled, or will I be charged for any calls I try to make?

It would be disabled until you purchase more minutes.

Since it's "pre-paid" , everything needs to be paid ahead of time. Being charged after you make the call would be post-paid, where you pay after you go over your alloted amounts

Prepaid is like putting gas in your tank. You can't run on empty. Pay ahead. Plan ahead. But you need a paid-up baseplan to move at all.
If you run out of data but still have minutes, you can talk. Run out of both and you can still text as long as your baseplan is alive.
