I have a Samsung Galaxy Core bought on contract from Koodo. I have a question that if I install Android Lolliop with custom ROM on my Galaxy Core, will it void my warranty from Koodo or Samsung. Plus is it legal for phones on-contract to Upgrade like that.

Yes, if you install a custom rom on your phone you will void the warranty. Manufacturers will only accept responsibility for software which they themselves provided.
Ok, Thank you. That means I won't get Android Lollipop until the official release for my phone.

There is nothing illegal about using a custom ROM, it does however void your warranty as you are now using the device as it wasn't intended

How long have you had the phone?  If it is over a year old, then the warranty is expired anyway.
