How do you unlock your phone once Koodo has unlocked it? I called Koodo and they unlocked my phone and said I have to plug it into my computer/Itunes to finish the process. What do I do once I have plugged it in...

You will need to update or restore via itunes for the unlock to install

If we restore via iTunes will this eliminate the contacts, picture etc on the phone?

Yes. So you should backup via itunes first

I NEVER had to restore my iPhone when I unlocked them. You simply plug it in, open iTunes and a message should show saying your iPhone is now unlocked.

That being said, most carrier would tell you to do the following (after they've performed the unlocked on their backend):

1. Open iTunes on your Mac or PC and verify that you have Internet connectivity.
2. Ensure a SIM card is inserted into your iPhone.
3. Connect your iPhone using the dock connector to USB cable that came with your iPhone.
4. Backup and restore your iPhone using iTunes. For information on backup and restore, please visit http://support.apple.com/kb/HT1414.
5. After restoring, your iPhone will be unlocked.

Strange it's still not working. I have restored the phone and put the new SIM card in and it still says No Sim in the top left corner

That is very odd. Have you tried doing a hard reset (i.e. hold the home and power button off for a few second until the Apple logo appears)?

Koodo may have had an error with the unlocking. If it is verified to be locked. Then I would call koodo to see what's up

Or you can just insert another carrier SiM into the phone and the phone should restart unlocked on the carrier. That's all I did for a iPhone 5S last week that I unlocked from Bell and switched to Koodo
