To Canada from UK: I have a Koodo sim card already and a phone that will work in Canada.

So I am originally from Canada living in the UK. I had a plan with Koodo, iPhone 7. Pretty sure my plan is over now, as of about last month. Anyways, I am traveling to Canada for a week this Saturday (May 13) and I want to be able to use my phone while I'm there. Can I buy a prepaid plan and link it to my old SIM or do I need to go out and buy a new SIM altogether?

Prepaid and postpaid Sims don't mix yet. If you want something prepaid quick you'll have to buy a prepaid Sim and use that.
Which I have to go in store to do, right? There's not really any way for me to have it active as I'm entering the country?

Not afaik. You'd need a Sim with you. Maybe if someone picking you up got one for you and set it up.

If you want it active as you enter the country, I recommend ordierng the prepaid sim from ebay (they usually sell it for less than what Koodo does).  Then activating the card online before your flight
