Not sure whether it will work with Koodo though.
GSM 850/900/1800/1900MHz,
UMTS: 900/2100MHz,
LTE-FDD B1/ B3/ B7/ B8/ B20,
UMLTE-TDD B38/ B40
Can anyone help me with that?

Unfortunately it will not, you need bands 850/1900 for UMTS (aka 3G or HSPA/HSDPA).

Also, the other option I am considering (also a Huawei)

4G: LTE FDD: Band1(2100mHz)/B3(1800mHz)/B7(2600mHz);TD-LTE: Band38/39/40/41(100MHz),  
3G: WCDMA: 850/900/1900/2100mHz;  TD-SCDMA: Band34/39;
2G: GSM/GPRS/EDGE: SIM1: 850/900/1800/1900MHz, SIM2: 900/1800/1900MHz


Would this work, by any chance?
And by "work", I mean making phone calls and texts, I am not planning to use mobile Internet.

If you're still looking, the 3G 850/1900 + 4G Band 4 (1700/2100) is your target.

Would be a shame to spend money on a gorgeous screen and eventually find out that data is hit and miss once your needs evolve.

well the first one is kinda strange, because the seller has indicated UMTS: 900/2100MHz as working frequencies, and posted an image of the phablet right below with the following specifications: UMTS:B1,B2,B5,B8. If the specifications are correct, the first one should work as well, right?
Or is it actually possible that the seller's characteristics differ from the original product?

Normally the seller's characteristics should not differ from the original product unless there are few version of the product. BobTheElectrician is right, if you want to be sure to take advantage of our network, you'll need a phone compatible with  the 3G 850/1900 + 4G Band 4 (1700/2100).
