Just I finished a phone conversation, I got a notice that I am over the limit in monthly 300-MB data usage.  I checked where has the data usage come from and I found out that most of the data when to the "Google Play Services" despite not using this app at all during this billing cycle.  I am not sure if this is due to some recent update I just got.  Any help will be appreciated.

Google play services handles updates to all apps installed on the phone.

Thank you. but, how can I prevent his from happening again(I did attempt to mitigate this problem by restricting the background usage of data, if it helps).

Is it possible I could undo the updates?

If you undo updates Google will want to reinstall them again.
You could, force stop, some or all your apps, but then you run into problems, because many, if not all pre loaded apps are linked together, to work as a whole.
Your best bet would be, turn your data off and use WI FI to do all your updates manually.
However if turning your data off and using WiFi only updates is something that is not feasible to you, I would think that you may want/need to consider up grading you data plan.

But if you unusually the updates the phone will just update the apps again so not sure why you want to know how to unintelligible the updates because thats just going to cause you more data usage and more money in the end?

Re read Steve's response above and disable auto update of apps within the Google PlayStore as well as disabling background data for your apps so they will only update when you open them. Keep in mind that you won't see if you have a notification for that app until you actually open it so doing this kind of defeats the purpose of a smartphone.
