Why can't I remove the Extended Warranty add-on in my tab account? I was told I could opt out and cancel that option anytime, and I want to.

Just simply call customer service and they will be able to remove it for you :)

No, they won't since you can't do it through self serve.
Can I lower how much I pay off my tab each month so that my monthly bill can be affordable to me?

The CRTC requires your Tab be completely paid off in 24 months. Your Tab is likely just the amount you borrowed from Koodo when purchasing the phone, split into 24 equal payments. As such there is no room to adjust the fee, or lengthen the payment period.
You could choose a smaller plan to reduce your bill, though.
What if I made extra payments on my tab, would I be able to make my monthly bill smaller without having to change my plan?

You can pay off your tab in total, but there is no option to accelerate Tab payments.
So I wouldn't be able to get to a point where I could switch to a small tab if I payed enough on my tab where I could switch to a small tab payments? And if I payed off my entire tab could I take the medium tab off or switch to a small paying tab?

Only way you can lower your monthly tab charge is you pay more upfront when you buy/upgrade your phone.

Example: If you want to buy a $450 phone.
Pay $90 upfront + $360 tab > ($15/mo tab charge + plan) will be your monthly charge.

Or, Pay $210 upfront + $240 tab > ($10/mo tab charge +plan)  will be your monthly charge.

Once you set your  tab charge, you can't change the amount.
