If I were to Unlock my Samsung Galaxy s7 this week, Will I get the Nougat update right away? Or will I still have to wait for when Koodo releases it for the s7 line?

No, sometimes people refer to phones bought straight from the company, (Off amazon, google store, etc.) they refer to it as unlocked.

Phones bought from the manufacturer will get updates quicker but unlocking your phone will not as it still needs to get updates from the carrier.

If the phone was sold by a carrier (Koodo, etc), your updates will always come from that original carrier even though the handset has been unlocked and used elsewhere.

So your phone will always gets the updates when Koodo streams them out unless you do something more drastic like rooting and installing operating system mods.

Going to take this one step further. Although BobTheElectrician has already answered, just wanted to simplify the answer.

If you sim-unlock the phone, this will allow you to use your phone with any carrier. It will not change when your device receives updates.

If you unlock the bootloader and void the warranty, you can root the phone, flash a rom (example Lineage OS) and use the latest Android 7.1.1 with features that Samsung wish you never had. Warning: this is not for everyone given that if you don't know what you're doing, you risk bricking your phone, and Koodo will not do anything about it.
