I added my daughter to my line, and recently, ended up using A LOT OF DATA! My bill has never been so high! I just told her that she has to pay $363 or I have to disconnect her line.i think I'm going to have to disconnect her data first.

You could add a data block to her account in order for this not to happen anymore on future times.

Going prepaid can be a great way to instill some discipline and avoid some $urprise$. When the tank is empty, it's empty. Users learn after a bit.

There are also a few helpful hints to limit consumption: turn off automatic updates to all applications unless connected to wifi. Leave data off unless you are ready to deal with it now.

What plan she has? How much data is included?
You can check/monitor her data/minutes usage through self serve.
You can give her some warning if it getting close to her limit. And block her data (or tell her she have to pay for overage ;)  I have done that to my kids.

The new plans have shock free data which sends a warning asking if you want to continue if you are at your data limit.  This way she can't plead ignorance as she would have to reply to the text to accept additional data charges
