From other carrier to Koodo

I have just transfer my number from other carrier to Koodo, so do I have to cancel my plan with my old carrier now or I don't have to do that? And when can I start using the plan?

You do not need to cancel with the old carrier. The porting of your number will have initiated the cancel process with the old carrier.

So which means now I just have to switch the sim card, and that's all?

as long as your phone works with Koodo (if the phone is locked with another carrier it will need to need to be unlocked first) then yes you can put in your Koodo sim

Transferring (porting) your number automatically cancel's your plan with your old carrier. You can use your Koodo plan immediately, however some services may not work properly until the port is complete
