Every time you connect to the exchange server, it parses your whole mail, calendar etc hierarchy. You may be able to restrict updates of some categories by unsubscribing to them, to reduce some bandwidth. You can also choose not to automatically update your email, but only get the info when you open the app.

You could set a filter on your exchange mail, and forward only important stuff to a secondary email on your phone, but that defeats the purpose of the exchange server.

A friend in the business had this issue with his wife's BB and the university mail server. They bought more data.
