I want to change from the default E-mail app on my Samsung S4 - to Boxter, Outlook or similar. Easy enough to download and set up - but, if I need to revert to my default app or change to a different e-mail app after installing my new one, how easy is it to change?

It's very easy. You just go into application manager to change whatever is the default app for what you wish to do. You'll just need to clear the set default app and it'll ask you to select a new one.

And will every stored/saved e-mail in every folder still populate and carry back over automatically? Seamless?

That's a bit more difficult for us to guarantee, but theoretically yes since it's stored on the email server.

As long as you've never deleted everything from the phone, you should be good. Set the other unused apps to never sync or temporarily delete your account from their prefs + turn off notifications and they will never even see your files or pester you. Easily reversible.
