I cancelled with Rogers, brought my iPhone to Koodo, backed-up my phone, restored it, inserted the new Koodo SIM card and it says: SIM not valid... what is happening

A sim not valid error means the phone is not properly unlocked. Check with Rogers to make sure their system show the iphone as unlocked. If it does, you may need to call apple to find out why it isn't unlocking.
