If my Galaxy s6 was unlocked would I get the update quicker or be able to update with KIES (I think that's what it's called) or flash the image?

To my knowledge, KIES has been replaced with Samsung Smart Switch, and available updates can be managed through that interface, for this updates not sent as an OTA (Over the Air) update.

Do not root your phone my friend.
voids your warranty and often causes more problems than solutions.
Just be patient, you haven't gotten the update yet because it's not stable on Koodos network. If you rush it or find some way to squeeze it in there you're just gonna cause a nuclear reaction !

Yeah rooting just seems too messy and my luck I'd brick it or something!
