I will be going on a cruise leaving from Florida and stopping in Mexico and Grand Turks. What is the best plan for me to stay in touch with family at home in Canada?

Call only when you are in port... not on the open seas! You may not like the satellite roaming rates.

How do you actually know you're on Satelite and not covered? Does it say something special? Do they even have coverage in open seas? It would be completely useless IMO

Best to check with Koodo directly & your cruise line if you must call while not portside. Some US carriers have specific cruise roaming packages that cover you while underway The phone will be typically tied into a system on the ship.
I don't see anything listed by Koodo.
