How come my data usage shown in settings doesn't go back to zero at the beginning of the next month?

What phone do you have? If it's an iPhone you need to reset the statistics on the last day of your billing cycle. It doesn't know automatically when that date is

Settings > Cellular and scroll all the way down. You'll have the small reset statistics button
