For the Honor Play, I am unable to locate an exact model number, but it's listed as Honor Play Dual/Hybrid SIM 4G - International Version, with the following network compatibility: SIM CARD 1 [ 2G GSM 850 / 900 / 1800 / 1900 and/or 3G 850(B5) / 900(B8) / 1900(B2) / 2100(B1) and/or 4G LTE 800(B20) / 850(B5) / 900(B8) / 1800(B3) / 2100(B1) / 2600(B7) and SIM CARD 2 [ 2G GSM 850 / 900 / 1800 / 1900 ] .
I would like to be certain that these phones will work with Koodo before I purchase them.

Only sim1 will work based on your specs.
3G should work fine. But LTE only has the 850band

You will be working with less than a full deck. Would you buy a TV that only gets some of the channels depending on where you are?
Apart from the Huawei / Android issues, many cell towers usually only operate on only one or two of the eligible Canadian frequencies 850 (B5), 1900 (B2) , 700 (B17), 2600 (B7), 1700/2100 (B4). You should ideally suport all of these for full coverage.
The lower frequencies (700 and 850) have more range than the higher, so they are favoured in more rural locations.
In addition, many multi-SIM phones only support data on one channel. Ignore any 2G specs since that technology is not supported by the Bell/Telus network.
