Regarding the international roaming talk/text/data plan for $40 (which I want) - I'm seeing it says it activates immediately. I don't leave for Mexico until Saturday afternoon (it is currently Thursday evening). So until then, because I am still in Canada will my normal unlimited plan apply? Or until Saturday, for the next two days, will any messages I send count as part of my allotted 50 messages? I'm aware I need to add the roaming add-on and all that fun stuff - I just don't want to "add" anything if it's going to start subtracting from my 50/50/50 right away.. if that is the case I would wait until the very last minute at the airport to add international roaming/add-on for the week I am away.

Your use in Canada will still be deducted from your current plan. All the Roaming Add-on does is give you a discount on the minutes / texts / data you use when out of the country. So, while you won't be consuming minutes, etc from your International Add-on, the days begin to decrement as soon as you apply the Add-on. I suggest applying the Add-on in the morning of your departure. This gives you the opportunity to confirm it is applied before you leave, and you'll have an hour or so in the airport to address any problems, should they occur.
You can add the other free roaming add-ons (International Voice & International Data) now if you wish; they have no expiry.
